Butter Bean Soup

i am a little under the weather today... how i got a cold in June i will never know....

so i decided to make some BUTTER BEAN SOUP... i wanted dried beans but i couldn't find any...





diced some leeks...



diced celery... and just sauteed it all together with a little olive oil and a knob of butter... then added the stock.... and let it simmer on the stove slowly for about an hour...


















i am going to add some spinach at the very end right before serving so it just slightly melts...










i have anadama bread rising on the counter out of my Bread Baker's Apprentice cookbook...and don't know if it's going to be baked or not...moving pretty slow...



Butter Bean Soup



2 ribs of celery

2 leeks

one can of butter beans, rinsed and drained

a couple of handfuls of spinach

about 4 cups chicken or vegetable stock
1/2 cup pastina

chopped italian parsley to garnish


saute the celery and leek together in a little olive oil and butter till soft

add the chicken or vegetable stock


let simmer slowly about an hour

just before serving add a couple handfuls of spinach

add the drained butter beans

about 1/2 cup of pastina and cook till the pasta is cooked, about 5 minutes

add some chopped fresh italian parsley


sprinkle with parmesan if desired






i did a little taste test ...and it's good. o,k, here i go...i am going to go and bake the bread.

  1. I'm so sorry you are feeling bad. Summer colds are the worst. I love butter bean soup and this one should make you well in know time. If I were closer I'd bring you chicken soup.

  8. I made soup today too but not because of being under the weather but because OF the weather...too much rain, a bit chilly and windy. A perfect day for soup. Oh...and some homemade rye bread. Seems like we are on the same page!

  13. Aww, sorry you're under the weather, that stinks, there's nothing worse than a spring/summer cold!

    However, your soup looks divine, and I'll bet it was delicious. I've never had butter bean soup! I know hubby would love it too!

  15. That cold just doesn't want to let go! I hope the soup helped, but you might need stronger measures - a hot toddy and that a tuck into bed usually does the trick for me.

  22. Soup is just what you need for the dreaded summer cold (always the worst kind to get). I chuck butter beans in all sorts of soup, as they thicken a blended soup beautifully, or are just nice to eat whole. I can't understand why I loathed them so as a child!

  28. sorry to hear you're feeling low, I too just got over a stinky summer cold, they are SO dull... but a good bowl of soup seemed to work for me, so no doubt you'll be as right as rain in no time xx

  35. Hi Kary, oh my, I have been so remiss in visiting my blogger friends and posting lately. I was back on track for a bit there but now I'm late in posting about one of our Italy excursions. I hope that you are feeling better since you wrote this yummy butter bean soup post. How did your bread turn out - I'm bread challenged, or at least have been in the past. I'm determined to get past it and bake a delicious loaf someday soon. And your computer, poor baby - that must have been difficult!! The gelato sounds wonderful - I love how it was served in the little jar - so creative. I'm sitting here watching the skies turn black and the wind pick up. Made ravioli with fresh mint and ricotta today from wonton wrappers, and a pommarola sauce to accompany it. Hope all is well - love your newest photos by the way!! Ciao, bella!

    I am so sorry you have caught a cold. Take good care of yourself. My cold in May turned into a respiratory infection and bronchitis. At this time of year! Is that not insane?
