Chicken Pie

I made this for Sunday night's supper...
I just made a white sauce..added some chicken I had cooked and cut into tiny pieces, some cubed boiled new potatoes and a few mixed vegetables...made a crust, rolled it out and topped off the pie....


I have a set of these circle cutters I just love...this was the smallest one to make an air vent...



We aren't baking a CHICKEN PIE in the oven tonight...i have the radio on and he just said we reached 110 degrees...did I hear that right? 110 degrees. I remember 105 here in San Luis Obispo in the Summer of 2007...the year we moved here...but 110. Come on. That is just TOO HOT !!!! It has been a really cool summer up until now. I guess my luck ran out. I gave Teddy a cool bath...he loved it. Oh, we're bbqing tonight. After the sun sinks down. And are we all watching the FULL MOON tonight together..and thinking of each other all over this world...I am thinking of you.....

  1. Chicken Pot Pie is one of my very top favorites. Thanks for the reminder. Our weather is getting much cooler and perfect for this. Your's looks wonderful. I'll think of you and Teddy when I watch the moon tonight.

  3. It looks so good, and I love the vent you made. I'm going to do that next time. It's lovely.

    It's been so hot! Just heating up the oven is miserable, but I've got a big man to feed. Vegetables and fruit don't fill him up.

    I sat outside last night and the moon was beautiful. Marley was with me... Grace goes to bed at 9:00pm sharp. We sat there for a long, long time.

    Enjoy your moon... I may just you from my side of the world.

  5. Your site reminds me of the great Yankee Magazine. Sounds like you have had a great summer. It is so nice you and your husband have had all this time together!!

    What a cook--I admire people who are good cooks, I have a few recipes I enjoy making and that is about all.

  8. I make chicken pie almost exactly like yours! We have it a lot in the fall and winter. Not quite ready to turn the oven on for it yet! Stay cool!

  9. Well, Kary and Teddy, I'm actually 29 x 2! It actually works out this year! Over 100 degrees the world is getting hotter and hotter! I don't think we have had as many 85 plus degree days in the 'Burgh for a while! Hope you enjoy that full moon and the chicken pie! Thanks for stopping by my herb garden! xxoo Nancy

  21. The heat...we are feeling it here in Santa Rosa too, though we only hit 104 degrees. Did I actually say ONLY?

    I hope Teddy's cool bath helped to make him comfortable. My elderly pug, Winnie, has a special cooling jacket that I bought for her last year, a marvelous invention since we don't have air conditioning.

    Your pie looks fabulous, but I agree...too hot for baking.

    oh dear where has the time gone? i haven't been blogging too much this summer, so many other things needing my attention.

    I've enjoyed myself so much catching up here, your gorgeous pine sign and the tomato post ( i envy your cooking from Julias book) and the summer happenings.

    Teddy looks so sweet lying there in the sun, i just know he and owen would have so much fun playing together!

    And now you've gotten me wanting to make a pot pie too, I do love those. I am leaving for NYC in the morning till next week, but when i get back i am going to surprise my husband with one!

  23. Hi Kary, this looks so delicious! I didn't realize that you were having a cooler summer, our New Jersey summer has been one of the hottest and sunniest I can remember. We haven't hit 110 degrees, but you know how the humidity out here can just knock the socks off someone!! I see you've added some really wonderful new photos to your sidebar - the corn looks yummy and it's not so easy to grow. Hope all is well, give Teddy a snuggle for me! Ciao, bella!

  32. Your chicken pie looks lovely, and ohh, the crust, the crust! I have crust envy!!! LOL, as I mentioned before, crust is "big" in my family! Well, if you can't cook the pie you can freeze it for another day! Not to make you feel bad, but it's 62 degrees in Maine, I could wear mittens! I can still remember the time when my grandma used to cook these pies to bribe me to say that she is the prettiest grandma in the world and guess what..I always give in to my grandma's trick! LOL.
