Strawberry Sunshine Preserves

strawberry season is in full swing around here so i decided it was time to make my STRAWBERRY SUNSHINE JAM...

the market had rhubarb too...and cherries...



i just added a couple of stalks of the rhubarb right into my strawberries...

i got out my mom's red plaid recipe box... what a treasure...








i have an aunt who lives up in santa cruz on a produce farm...we call her Gog and this is her recipe for rhubarb jam...











here is the recipe card for my mom's Strawberry Sunshine Preserves.....














i just sliced up about 2 cups of strawberries and added in a couple stalks of rhubarb...
















added one cup of sugar and the juice of one lemon...crushing the berries and rhubarb with a spoon and let it simmer for 8 to 10 minutes...

















poured it into a dish and put some in a tiny glass to taste... it's good....

















and set it in the sun...i let it go for 2 days...bringing it in at night...the jam gets really clear and just slightly thickened...
























i put the jam in my swanky swig juice glasses...covered them with cupcake papers and tied them with string... i have been seeing the cupcake tops on jam around the internet but mom always covered hers with the cupcake papers... if you look real close you can see who got in on the jam making....whiskey sour... this jam keeps for about a week in the fridge and is good on english muffins, toast or scones...or even on ice cream... happy jam making.

  2. My cherry tree is loaded and I have been making cherry jam. I like cherry and rhubarb but my rhubarb this year is pathetic and there is non in the shops either so...... Have a good weekend Diane

  5. I've never heard of sunshine preserves, sure sounds interesting! I made strawberry rhubarb jam last year, got both from the garden, that was great. Enjoy:@)

    Can I just say? those pictures are the winner winner chicken dinner of all time?
    They make me want to make this jam , and I've been seeing flats around. Must be a good year for them. My favorite part is adding the rhubarb. Time to hit the farmers markets again!

  22. We are getting all delicious strawberries from California in the supermarkets. I think I will wait though until it is summer time to make this jam. Our sun is not hot enough yet. I love the cupcake covers. Because I'm a copycat I think I'll be using that idea. Thanks Kary!!!

  23. What a well worn and well loved recipe, a priceless treasure. The jars look oh so pretty. My rhubarb is almost ready for harvest but unfortunately the strawberry fields are a bit behind this spring due to the cold and wet weather! Rain is forecast for the coming week, such is life in New England! Hugs, Julie.

  32. What a delicious looking jam! My rhubarb plants are huge and I can't wait to start using it!

    It's a cutting from hubby's great grand-father's rhubarb plant, so it's over 130 years old!

    I just love the cupcake papers on the jam, I'm so stealing this idea! It's so cute. How nice that you have your mom's recipe box, I have hubby's mom's - it's a real treasure.

  33. Strawberry and Rhubarb jam is my favorite. I always search for it in country markets, and make some myself each year. When we lived in Germany it was possible to find it in the supermarkets - oh I was spoiled!

  35. I can almost smell and taste it :-)
    My mum is great at making jams, jellies, preserves and so on; she makes a strawberry jam that is like summer stored in a jar... it keeps for up to 6 weeks when she makes the "cold" variety and for several years when she uses the "hot" method.
